Venison Roast

Got a phone call from grandma's house telling me we have lots of deer & elk in the freezer & you need to take some home... ( ME???) I have not had elk or deer in lets say a very long time if I would have to guess how long...I was maybe 15 year old I am ok are you sitting 37 going on 57... some days I feel this way..

Step 1

Pick a piece of meat from freezer.I open door of freezer to find about 25 white packages now to read all the labels and decide.(Pheasant/Elk/Dove/Deer)

Step 2

Pick only deer meat (I didn't want to get to adventurist
)

Step 3

Locate a recipe since I have never cooked it before. This should have been step 2 but why think before your pick meat lol.

Brussel sprouts that weird little vegetable that most people skip at the store due to "How the hack do I fix that?" Well that is what I thought as well so I picked up 5 little Brussels sprouts why 5 huh.!! well that is what I grabbed I only wanted a few to try plus since dd was not going to try them I only needed 5.
Now I arrived home w/ 5 little green guys in a huge plastic bag now what? Off to Allrecipe.com to see what I could find to help me cook these little guys up and make them taste!! The search yielded me 67 recipe to pick from I choose Roasted Brussel Sprouts

Verdict: Bitter read more reviews about removing the center stem (which is what cause it to be bitter) to late to fix my issue however minus the stem area which I skipped on the other ones Taste but I would suggest cooking slower on lower heat 350*F since the oil started to splatter all over.

Apple Sauce Bread Pudding

This is a family recipe my mom always made when I was growing up where she got it I am not sure. This was one of the recipes my mom made a lot when I was growing up as we lived in the middle of no-where 7 miles from town in Michigan. We lived on 1.5 acres surrounded by an 80 acre corn field and acres of the best apples I have ever eaten Michigan apples. We always had homemade applesauce and day old bread even in the winter when we were snowed in for days.

Photobucket

Any kind of plain bread will work this type just happens to be day old sour dough bread used for sandwiches.

Photobucket

5 cups of torn up or diced up bread

Photobucket

Place the bread pieces into a large mixing bowl.

Photobucket

The applesauce bread pudding usually goes into a greased 9 x 13 pan.
Since I didn't want to eat all the bread myself I split it up into 2 (8 x 8 pans) I plan to give one to my mom since she is currently to busy to bake.

Photobucket

3 cups of milk

Photobucket

2nd bowl wet ingredients

1 cup of applesauce
1 cup of sugar
3 eggs
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2tsp. vanilla

Photobucket

Mix the above ingredients in to the 2nd bowl but use a third bowl to scramble those eggs (and check for egg issues) before dropping them into the other wet ingredients

Photobucket

In a medium size pan heat (scaled) the milk & 1/2 cup butter

Photobucket

When the milk/butter is hot pour over the bread pieces.

Photobucket

Allow to soak for 10 minutes.

Photobucket

Mix it up well after it has sit for 10 minutes

Photobucket

Mix the bowl 2 into the bowl with the bread/milk mixture and blend well.

Photobucket

Pour the mixture into the 2 pans and bake 325*F for 1 hour or until a tooth pick comes out clean.
When the applesauce bread pudding is cooled refrigerate it cut and serve cold.

Yummy and I love this bread for breakfast.

Stuffed Green Pepper

This dinner started off as a use up leftover ingredients this and that with an actual recipe I just used as usual what I had on hand or leftover that I assumed would work... and this is the original recipe Stuffed Green Peppers I while playing on my favorite cooking website the was the daily recipe the other day and I thought I could use my leftover meatballs & sauce in this from the dinner we had the night before :O)

Photobucket

2 green bell peppers (use what you prefer)
1 cup of leftover spaghetti sauce
6 turkey meatballs
1 package of mushrooms
1 cup of precooked white rice from the freezer
Green onions
Worcestershire sauce
Shredded Cheese

Photobucket

Bigger Pot-boiling water & salt bring to a boil this is to parboil the green peppers in for (5mins to soften them up).

Smaller Pot- this was to cook the mushroom & filling mix in.

Photobucket

Cut the tops off & remove seeds
Left with some nice top pieces that I could add to the filling no reason to waste good product just because a recipe doesn't call for it :O) got to love recipe that seem to waste things..

Photobucket

I dropped the peppers in the boiling water along w/the pieces of the tops.

Photobucket

In the smaller pot I sauteed in butter the diced mushrooms

Photobucket
Diced the green pepper tops be added to the filling mixture.

Photobucket

After the mushrooms reduced I added the following items spaghetti sauce, diced up meatballs, white rice, green onions, Worcestershire sauce and shredded cheese mixed up well.

Photobucket

In a glass loaf pan I lined it with foil for quicker clean on after dinner. I also sprayed the foil as well and then placed the par-cooked green peppers into it.

Photobucket

Filled the pepper w/ filling & shredded cheese.

Photobucket

Popped the stuffed green peppers into a toaster oven for 30 mins at 350*F

Verdict: I don't like the bell pepper part go figure but I loved the stuffing so I will just create the stuffing part for dinner using the diced up bell peppers next time
